Apple Pie Autumn Cheesecake

CRUST – 1 1/4 cups of graham cracker crumbs, 2 tablespoons of reduced-fat butter, 1/2 teaspoon of cinnamon
FILLING – 2 8oz packages of reduced-fat cream cheese, 2 egg whites, 1 large egg, 1 cup of sugar, 1/2 cup of reduced-fat sour cream, 2 teaspoons of pure vanilla extract, 1 teaspoon of lemon juice
TOPPING – 1 21oz can of Comstock apple pie filling, 2 tablespoons of sugar, 2 teaspoons of cinnamon
Step 1: Preheat the oven to 350 degrees.
Step 2: Grab a 9-inch spring form pan and coat it with cooking spray.
Step 3: Begin by making the crust. In a bowl, combine the graham cracker crumbs, the cinnamon, and the butter. Once it has been combined, press the mixture into the bottom of the prepared baking pan. Set the crust aside.
Step 4: Make the filling next, using an electric mixer, a hand mixer, or a large bowl. Beat the cream cheese until it has a smooth, fluffy consistency.
Step 5: Gradually add the egg whites, large egg, and sugar into the mixture until it’s smooth.
Step 6: While stirring, add in the sour cream, lemon juice, vanilla extract. Once everything has been mixed in, pour the filling over the crust and spread it evenly across.
Step 7: Bake the cheesecake for 30-40 minutes (or until the center is settled). Afterward, allow the cheesecake to cool completely. Place it in the refrigerator for at least 6 hours to finish settling.
Step 8: Once your autumn cheesecake has been refrigerated, start preparing the topping. Use a small bowl and a rubber spatula to combine the apple pie filling, cinnamon, and sugar.
Step 9: Spread this mixture over the top of your cheesecake.
Step 10: Refrigerate until you are ready to serve.

CRUST – 1 1/2 cups of graham cracker crumbs, 6 tablespoons of unsalted butter (melted), 1 tablespoon of sugar, 1/2 tablespoon of cinnamon
FILLING – 3 8oz packages of cream cheese, 1 1/2 packed cups of light brown sugar, 15 oz can of pumpkin pie mix (or puree), 4 eggs, 1/4 cup of sour cream, 2 tablespoons of all-purpose flour, 1 tablespoon of vanilla extract, 2 teaspoons of pumpkin pie spice, 1/4 teaspoon of salt
*Caramel and whipped cream for topping
Step 1: Preheat oven to 350 degrees.
Step 2: Start with your crust by mixing together the graham cracker crumbs, 1 tablespoon of sugar, 1/2 teaspoon of cinnamon, and the melted butter. After it is all mixed together, transfer the crust ingredients into a 9 inch pan (with at least 3 inch tall walls) and bake for 8 minutes.
Step 3: Use a bowl or a mixer to beat the 3 packages of softened cream cheese and the 1 1/2 cups of brown sugar. Beat until the mixture is fluffy. Set the cream cheese mixture aside.
Step 4: Grab a separate bowl to whisk together all of the remaining filling ingredients. Then, pour this separate mixture into the cooled crust you prepared and bake the cheesecake at 350 degrees on the middle rack for 1 hour.
Step 5: Store the cheesecake in the over for at least 4 hours.
Step 6: Top this dessert with caramel sauce and whipped cream. Serve.
